‘Left Over’ Mexican Wrap

During the festive season, over-indulgence is almost a given. With cooking and feasting the order of the day, your fridge will more than likely be laden with leftovers for days. This wrap takes a few staples that you’ll probably have lying in your fridge – cooked rice and meat – and turns them into a delicious, flavour-packed meal.

Wrap

Ingredients:
2 cups leftover cooked rice
2 cups shredded or finely chopped leftover cooked meat (chicken, pork or beef would work best)
2 carrot, grated
1 tin tomatoes
1 tsp olive oil
1 clove garlic, finely chopped
2 tsp cumin
1 tsp eat.art Spanish Paella or Mexican Fiesta Exotic Spice mix
large tortilla wraps
salt and sugar to taste
fresh avocado and coriander, to serve

Method:
To make the spicy Mexican tomato sauce, place the olive oil and garlic in a small saucepan over a medium-high heat and fry until the garlic starts to turn a golden brown. Add the tin of tomatoes, the spice mix and cumin, stir, and reduce the heat to medium. Simmer until the tomatoes have broken down completely and started to reduce ever so slightly. Taste, and add sugar and salt as required.

To assemble the wrap, stir your meat (or beans, as a substitute) into the spicy tomato sauce. Place ½ cup of rice, the spicy tomato meat and all other toppings inside the wrap, before folding. Enjoy immediately!
